P\u00edsa\u0165 o \u0148om by sa dalo naozaj cel\u00e9 dni, ale to by sme mohli rovno nap\u00edsa\u0165 knihu. A ke\u010f\u017ee \u017eijeme v r\u00fdchlej dobe a ani my nem\u00e1me radi dlh\u00e9 texty, ostala n\u00e1m jedin\u00e1 mo\u017enos\u0165. Pavol Hod\u00e1l ostal milo prekvapen\u00fd, ale ni\u010domu sa nebr\u00e1nil a jeho otvorenos\u0165 k r\u00f4znym t\u00e9mam z podnikania \u010di osobn\u00e9ho \u017eivota sme zhrnuli ni\u017e\u0161ie.<\/p>\n<h5><strong><u>\u010co \u0165a viedlo k zalo\u017eeniu re\u0161taur\u00e1cie?<\/u><\/strong><\/h5>\n<p><em>V\u00fdzva? Ako kuch\u00e1r som mal v\u017edy vz\u0165ah k vareniu a chcel robi\u0165 veci najlep\u0161ie ako viem, a hlavne poctivo. Pri\u0161iel moment, kedy som sa rozhodol to sk\u00fasi\u0165 a odvtedy sa to so mnou \u0165ah\u00e1. \u00daprimne povedan\u00e9, povedal som si, \u017ee je na\u010dase sa posun\u00fa\u0165. Nie\u010do vybudova\u0165, \u010do by mohlo te\u0161i\u0165 mojich kamar\u00e1tov, moju rodinu a hlavne, m\u0148a samotn\u00e9ho. A aj ke\u010f za\u010diatky neboli ide\u00e1lne, dne\u0161n\u00fd de\u0148 po\u010das tohto rozhovoru sa m\u00f4\u017eem kone\u010dne usmieva\u0165, preto\u017ee viem, \u017ee to \u010do rob\u00edm, rob\u00edm dobre, a to zasl\u00fa\u017een\u00e9 ovocie kone\u010dne za\u010dalo prich\u00e1dza\u0165 v podobe spokojn\u00fdch z\u00e1kazn\u00edkov, ako aj cel\u00e9ho person\u00e1lu, ktor\u00ed m\u00e1 v tej spokojnosti prsty.<\/em><\/p>\n<h5><span style=\"text-decoration: underline;\"><strong>Keby si nemal t\u00fato prev\u00e1dzku, \u010do mysl\u00ed\u0161, kam by smerovali tvoje kroky?<\/strong><\/span><\/h5>\n<p>To v\u00e1\u017ene netu\u0161\u00edm. Ve\u013ea kr\u00e1t som nad t\u00fdm rozm\u00fd\u0161\u013eal a h\u013eadal by som pravdepodobne zmysel v nie\u010dom svojom. V\u017edy som chcel robi\u0165 nie\u010do s\u00e1m a neby\u0165 na niekom z\u00e1visl\u00fd. No mo\u017eno by som len cestoval a spozn\u00e1val svet. Kto vie, \u010do by mohlo by\u0165 dnes, ale ak by som sa mal zamera\u0165 na nejak\u00e9 odvetvie, bola by to taktie\u017e gastron\u00f3mia. Ale vie\u0161 ako sa hovor\u00ed, v\u0161etko sa deje pre nie\u010do a v\u0161etko je tak ako m\u00e1 by\u0165. A ja ver\u00edm, \u017ee to plat\u00ed aj v mojom pr\u00edpade a re\u0161taur\u00e1cia Hajcer tu je taktie\u017e z nejak\u00e9ho d\u00f4vodu. Z\u00e1kladom bolo nevzda\u0165 sa, \u00eds\u0165 si za t\u00fdm ka\u017ed\u00fd de\u0148 a to plat\u00ed st\u00e1le.<\/p>\n<h5><span style=\"text-decoration: underline;\"><strong>Ak by si mohol vr\u00e1ti\u0165 \u010das, \u010do by si zmenil?<\/strong><\/span><\/h5>\n<p>T\u00fdch ch\u00fdb bolo ur\u010dite mnoho, ale sk\u00f4r to beriem tak, \u017ee z ch\u00fdb sa treba pou\u010di\u0165 a do bud\u00facna sa v\u0161etk\u00fdm minul\u00fdm nedostatkom vyvarova\u0165. Nedok\u00e1\u017eem v\u0161ak vyvr\u00e1ti\u0165, \u017ee ka\u017ed\u00e1 jedna z t\u00fdch ch\u00fdb ma niekam posunula, nau\u010dila ma nie\u010do nov\u00e9 a vybudovala vo mne tak\u00fa osobnos\u0165, akou som dnes.<\/p>\n<h5><span style=\"text-decoration: underline;\"><strong>V mene Pavol Hod\u00e1l sa slovo HAJCER nenach\u00e1dza. Pod\u013ea \u010doho si vybral n\u00e1zov re\u0161taur\u00e1cie?<\/strong><\/span><\/h5>\n<p>Asi 10 rokov dozadu tu e\u0161te nest\u00e1la re\u0161taur\u00e1cia, ale pohostinstvo mojich rodi\u010dov, v ktorom to sk\u00f4r fungovalo ako piv\u00e1re\u0148 a volalo sa to Pohostinstvo pri Mlyne. Prez\u00fdvku Hajcer u\u017e mal m\u00f4j star\u00fd otec, aj otec, tak\u017ee z Pohostinstva pri Mlyne sa stalo pomenovanie Hajcer&#8230; Idem k Hajcerovi&#8230; Priamo nem\u00e1 ni\u010d spolo\u010dn\u00e9 s menom Pavol Hod\u00e1l, ale s mojou rodinou ma toho spolo\u010dn\u00e9ho a\u017e dos\u0165. T\u00e1to prez\u00fdvka je dlh\u00e9 gener\u00e1cie trad\u00edciou v na\u0161ej rodine a som naozaj v\u010fa\u010dn\u00fd za to, \u017ee nezanikla a m\u00f4\u017eem ju hrdo pou\u017e\u00edva\u0165 aj na\u010falej.<\/p>\n<h5><span style=\"text-decoration: underline;\"><strong>Spom\u00ednal si, \u017ee za\u010diatky boli n\u00e1ro\u010dn\u00e9. \u010co \u0165a motivovalo nevzda\u0165 to a\u00a0\u00eds\u0165 si za svojim snom?<\/strong><\/span><\/h5>\n<p>Za\u010diatky s\u00fa v\u00e4\u010d\u0161inou n\u00e1ro\u010dne v\u0161ade, a my sme neboli toho v\u00fdnimkou. Trv\u00e1 to ist\u00fd \u010das, po kedy vylad\u00ed\u0161 v\u0161etky nedostatky, po kedy \u013eudia ochutnaj\u00fa tvoj produkt a n\u00e1sledne si n\u00e1jdu cestu k tebe. My sme to ust\u00e1li a v roben\u00ed toho najlep\u0161ieho sme sa nikdy nepl\u00e1novali vzda\u0165.<\/p>\n<p>Motivovala ma t\u00fa\u017eba robi\u0165 nie\u010do najlep\u0161ie ako viem a by\u0165 v tom \u00faspe\u0161n\u00fd. A ke\u010f ti \u013eudia odovzd\u00e1vaj\u00fa pozit\u00edvny feedback, tak m\u00e1\u0161 chu\u0165 nepresta\u0165 a st\u00e1le sa zdokona\u013eova\u0165, aby si mohol odovzda\u0165 z\u00e1kazn\u00edkovi len kvalitu, ktor\u00fa o\u010dak\u00e1va.<\/p>\n<h5><span style=\"text-decoration: underline;\"><strong>Aj ke\u010f pracuje\u0161 ako mana\u017e\u00e9r, ve\u013ea kr\u00e1t je vidie\u0165, \u017ee pom\u00e1ha\u0161 v kuchyni, ale aj za barom re\u0161taur\u00e1cie. \u010co v\u0161etko si sa za ten \u010das vysk\u00fa\u0161al?<\/strong><\/span><\/h5>\n<p>Chod re\u0161taur\u00e1cie je pre m\u0148a prvorad\u00fd a sna\u017e\u00edm sa, aby v kuchyni nevznikol \u017eiadny konflikt. Nech som bol v \u017eivote na akejko\u013evek vlne, jedno mi zdrav\u00fd rozum nikdy nedovolil. Povy\u0161ova\u0165 sa a ma\u0165 dikt\u00e1torsk\u00e9 maniere. Na\u010do je to dobr\u00e9? A \u010do som za ten \u010das vysk\u00fa\u0161al? \u00daplne v\u0161etko, ale najviac ma bav\u00ed robi\u0165 pizzu. Preto, ak m\u00e1m \u00eds\u0165 pom\u00e1ha\u0165 do kuchyne, u\u017e vopred viem, kde bude moje miesto.<\/p>\n<h5><span style=\"text-decoration: underline;\"><strong>\u010co je na tvojej pr\u00e1ci naj\u0165a\u017e\u0161ie?<\/strong><\/span><\/h5>\n<p>Udr\u017ea\u0165 st\u00e1le rovnak\u00fd level kvality a nevzda\u0165 to. T\u00fdm p\u00e1dom je vo\u013en\u00e9ho \u010dasu \u010faleko viac, tak\u017ee \u00e1no, aj na seba si ho n\u00e1jdem. M\u00e1m r\u00e1d cestovanie, objavovanie nov\u00fdch miest, preto\u017ee v\u0161etky tie z\u00e1\u017eitky mi d\u00e1vaj\u00fa kr\u00e1sne spomienky a in\u0161piruj\u00fa ma. No pozor. Treba si uvedomi\u0165 jednu vec. Ve\u013ea mlad\u00fdch \u013eud\u00ed si za\u010d\u00edna u\u017e\u00edva\u0165 \u017eivot e\u0161te predt\u00fdm, ne\u017e nie\u010do dosiahli \u010di vybudovali. To je pod\u013ea m\u0148a chyba, preto\u017ee zabi\u0165 roky \u017eivota z\u00e1bavou bez vn\u00edmania povinnost\u00ed ti m\u00f4\u017ee da\u0165 s\u00edce v pr\u00edtomnom momente pocit \u0161\u0165astia, ale do bud\u00facnosti \u017eiaden pr\u00ednos ne\u010dakaj. \u010ci\u017ee, tak\u00e1 mal\u00e1 rada do \u017eivota. Aj ty si za\u010dni \u017eivot u\u017e\u00edva\u0165 poriadne a\u017e vtedy, ke\u010f nie\u010do mal\u00e9 dosiahne\u0161. Nejak\u00fd cie\u013e, ktor\u00fd si si stanovil. Ver mi, \u017ee potom tie z\u00e1\u017eitky bud\u00fa chuti\u0165 ove\u013ea viac.<\/p>\n<h5><span style=\"text-decoration: underline;\"><strong>Ak\u00e9 s\u00fa tvoje pl\u00e1ny do bud\u00facna?<\/strong><\/span><\/h5>\n<p>Bud\u00faci rok by sme chceli re\u0161taur\u00e1ciu upgradnu\u0165 a posun\u00fa\u0165 to op\u00e4\u0165 na in\u00fd level. Taktie\u017e pracujem na pr\u00edprave aplik\u00e1cie, ktor\u00e1 by mala by\u0165 dostupn\u00e1 pre ka\u017ed\u00fa re\u0161taur\u00e1ciu, ale \u010falej u\u017e nebudem prezr\u00e1dza\u0165. P\u00fdcha predsa len predch\u00e1dza p\u00e1d a e\u0161te nie je d\u00f4vod na odha\u013eovanie niektor\u00fdch vec\u00ed. Pl\u00e1ny s\u00fa, v\u017edy boli, ale treba ich najsk\u00f4r splni\u0165. Sna\u017e\u00edm sa od konkurencie odl\u00ed\u0161i\u0165 a ke\u010f to neodfl\u00e1knem, \u013eudia to ocenia. Za t\u00fdmto sme si i\u0161li a v\u017edy aj p\u00f4jdeme. A ako na na\u0161e kroky bude reagova\u0165 konkurencia je u\u017e len na nich, ale ver mi, \u017ee sa budeme v\u017edy sna\u017ei\u0165 dr\u017ea\u0165 jeden nen\u00e1padn\u00fd krok vpred, aby n\u00e1s ni\u010d nedok\u00e1zalo prekvapi\u0165, a aby sme boli pr\u00e1ve my t\u00ed, ktor\u00ed prekvapia.<\/p>\n<h5><span style=\"text-decoration: underline;\"><strong>Z\u00e1kazn\u00edci n\u00e1jdu v tvojom menu jedl\u00e1, ktor\u00e9 s\u00fa autentick\u00e9 z Talianska, ale pri tom ste v\u00fdborn\u00ed aj v street-foode?
